Baked Shrimp Patty

Ingredient List

  • Mixed vegetables (frozen) – 2 Bags
  • Shrimp (frozen, shelled and devein) – 1 bag
  • Evaporated Milk (low fat) – 2 cans
  • Eggs – 1 carton
  • Napkins – 1 bag

Recipe:

  • 2 ½ cup Mixed vegetables
  • 1 cup Shrimp cocktail
  • 6 fl oz Evaporated low fat milk
  • 2 cup all purpose flour
  • 1 Tbsp Baking Powder
  • 2 Eggs
  • 1 Tsp Salt
  • ¼ cup Water

Direction:

Mix flour, carnation milk, baking powder, eggs, salt, and water in a bowl. Consistency of batter should be similar to a pancake batter. Add the mixed vegetables and shrimp into the batter. Pour 1/8 cup of mixed batter into each muffin pan. Bake at 350 for 12-15 minutes.

Brown Fried Rice

Ingredient List

  • Spam (lite) 2 cans
  • Mixed Vegetables (frozen) 2 bags
  • Brown Rice 2 bags
  • Yellow Onion 2 large ones
  • Kikoman Soy Sauce (lite) 1 bottle small
  • Garlic Powder 1 container small
  • Seasoned All 1 container small
  • Egg Substitute 2 cartons
  • Green Onion 2 bunches
  • Seasoned All (salt substitute) 1 tablespoon

Recipe:

  • Brown Rice (cooked w/chicken stock) 3 cups
  • Spam (lite) 6 oz.
  • Mixed Vegetables (frozen) 2 cups
  • Yellow Onion 1 large
  • Green Onion ½ cup
  • Egg Substitute ½ cup
  • Kikoman Soy Sauce (lite/low sodium) ¼ cup
  • Garlic Powder 1 tablespoon
  • Black Pepper ½ tablespoon
  • Seasoned All (salt substitute) 1 tablespoon

Preparation:

Soak mixed vegetable in hot water and drain. Cook egg substitute in a nonstick pan, cut into bit size pieces and set aside.  In a large nonstick pan sprayed with cooking spray, sauté yellow onions and then add spam. Cook until lightly brown and then add rice. Fry until rice is heated through, turning occasionally and then combined mix vegetables and egg substitute. Add the black pepper, seasoned all, garlic powder and soy sauce. Mix well and top with green onions for garnish.

 

Vegetarian Tinaktak

  • Ground Soy: BOCA Meatless (2 bags)
  • Chopped Green Vegetables (String beans, pumpkin tips, eggplant)
  • Garlic (1 clove)
  • Onion (1 bulb)
  • Garlic Powder to taste
  • Sea Salt to taste
  • 2-3 cans of coconut milk
  • 1 lemon

All ingredients are the same for this delicious vegetarian dish. We've just exchanged the beef for ground soy using the meatless BOCA. Cook all ingredients as you would when making regular Tinaktak.

 

Portabella Phad Thai

  • Bag of Sea Kelp Noodles (2 bags).
    Make sure you soak noodles in water for 5 mins., drain.
    (Optional to cut noodles since they are pretty long)
  • Sauce
    1-2 tablespoon/s of Miso Paste
    4-6 tablespoons of Adams organic crunchy peanut butter
    1/2 teaspoon of sesame oil
    1/2 teaspoon of apple cider vinegar
    stevia to taste (Stevia is a natural sweetener; a little goes a long way.)
    water for consistency.
    -You may add more peanut butter or peanuts according to taste and sauce consistency.
  • Veggies
    thin slices of bell pepper (red, orange, green)
    shredded carrots. (Other options: bean sprouts, thinly sliced zucchini, spinach)
  • Portabella Mushroom
    Marinade in Braggs Amino Liquids for a couple of hours
    1-2 cups of Braggs with a package of sliced portabella mushrooms
    1/2 - 1 clove of garlic- chopped
    (Braggs amino liquids is a substitute for soy sauce; it's soy based and a healthier option than soy sauce)

Mix sea kelp noodles, veggies, peanut sauce and gradually add in portabella mushrooms with garlic. Add minimal amount of braggs marinade sauce as an option.

 

Almond Space Balls

  • One 8 oz. jar of Odwalla Creamy & Raw Almond Butter
  • package of Dates (Remove seeds and slice thin.)
  • package of raw almonds
  • 2-3 cups of Coconut flakes

Place almonds in food processor or blender and chop/grind until partially fine. Mix almond butter, dates, chopped almonds and coconut flakes together in a bowl. You may use the blender or food processor to mix the above ingredients, but ingredients may become too sticky; so may need to mix manually. Roll into space balls, serve and eat.

[Pls. note that you can add more of the above ingredients according to crunch and taste. The dates are what make the space balls sweet and the almonds add the crunch and texture. You can also drizzle a little of the almond butter on top or some cacao powder for a chocolate twist to the space balls.]
