Bitter Melon Kimchi
Ingredients
- 1 bitter melon
- 2 tbsp + ½ tsp salt
- 2 cups radish, cut into matchsticks
- ¼ cup of chives, chopped
- 1 small carrot, cut in matchsticks
- 1 small onion, sliced thinly
- 2 garlic cloves, minced
- ¼ cup gochujang
- Fish sauce, to taste
- 1 tbsp sugar
- Sesame seeds
Directions
Rub bittermelon with salt and let sit 30 - 60 minutes
Drain, rinse, and squeeze out excess liquid
Mix radish with ½ teaspoon salt and let sit for 10 to 20 minutes
Drain, rinse, and squeezing out excess liquid
Mix gochujang, fish sauce, carrot, garlic, onion, and chives into radish and bittermelon and mix well.
