Cucumber and bitter melon kimchi salad
Ingredients
- 1 cucumbers
- 1 bitter melon
- 1 cup daikon radish
- 3.5 oz Kimchi base
- 3.5 oz vinegar
- Salt
Directions
Cut bitter melon in half lengthwise and remove flesh and seeds with a spoon.
Chop thinly into half moons
Massage bitter melon with 2 tbsp salt, and let it sit for 10 minutes.
Drain, rinse, and squeeze out excess liquid.
Chop cucumber into half moons.
Slice daikon radish into quarters.
Mix vegetables, vinegar, and kimchi base together and refrigerate for at least one hour before serving.
