French Onion Dip
Ingredients
- 12 oz tofu, drained
- ¾ cup cashews, soaked
- ½ cup red onion, diced
- 1 shallot, minced
- 1 tbsp dry parsley
- 1 cup low-sodium vegetable broth
- 2 tsp Worcestershire sauce
- 1 tbsp nutritional yeast
- 1 tsp garlic powder
- Pepper to taste
Directions
Sauté the onion and shallots in a pan over medium heat. Once brown, add the broth and cook until broth has evaporated.
Add everything except pepper to a food processor and blend until smooth. Season with pepper.
Serve with sliced vegetables, whole grain crackers, or chips.
