Pumpkin Gnocchi Dish
Ingredients
- 1 Cup cooked pumpkin gnocchi
- ¾ Cup fresh raw kale, rough chopped
- 3EA cherry tomatoes, cut in ½
- 1 Tbsp toasted cashews, chopped
- As needed olive oil
- TT sea salt and black pepper
Directions
Pre heat a med non stick sauté pan on hi for 2-3 min.
Add cooked gnocchi and sear for 1 min. Reduce heat to med-med hi heat and cook until all side are golden brown.
Remove gnocchi and add kale and cook for 2-3 min until wilted.
Add cherry tomatoes and cook til just warmed through.
Add the gnocchi back in. Turn off the heat and season with salt and pepper.
Toss with the greek yogurt dressing and top with the toasted cashews.
