Roasted Squash with Avocado Dressing
Ingredients
- Vegetable Ingredients: 2 cups Mixed Squash (butternut, acorn, kabocha), large dice; ¼ cup Avocado oil; ½ tsp Black pepper; ¼ tsp Dried basil/parsley; 1 cup Carrots sliced
- Dressing Ingredients: ½ c Primal Kitchen Green Goddess dressing; 1-2 avocados
Directions
Preheat oven to 375°F.
Combine vegetable ingredients in a bowl and toss.
Spread vegetables on a sheet pan and roast for 30 minutes, or until cooked.
Place dressing ingredients in a food processor, and mix until smooth.
Toss roasted vegetables in dressing and serve.
