Sweet Potato Salad
Ingredients
- 4 oz Roasted sweet potato (30-40 minutes at 400ºF)
- ½ tbsp Toasted almonds, chopped
- ½ tbsp Toasted walnuts, chopped
- ½ oz Fuji apples, julienne
- ½ oz Granny Smith apples, julienne
- 1 tbsp Dried blueberries
- 1 tsp Apple cider vinegar
- 1 tbsp Olive oil
- Black pepper, to taste
- 1 tsp Honey
- Dressing
- 2 tbsp Greek yogurt
- 1 tbsp Water
- ½ tsp Honey
Directions
Combine all dressing ingredients in a bowl. Mix well and set aside.
In a large bowl, toss together sweet potato, apples, vinegar, olive oil, and pepper.
Spread ½ of the yogurt dressing on a plate.
Layer the seasoned salad over the dressing.
Drizzle the rest of the yogurt on top and garnish with dried blueberries, almonds, walnuts and honey.
